Method
Prepare the Courgette:
- Preheat oven to 190°C (375°F).
- Slice Courgette lengthwise into thin strips (use a mandolin or knife).
- Brush with olive oil, sprinkle salt and pepper, and grill or bake for 3–4 minutes until soft and pliable. Set aside.
Make the Filling:
- In a bowl, mix cream cheese, Parmesan, minced garlic, chopped herbs, salt, and pepper until smooth
Prepare the Sauce:
- Heat olive oil in a pan, sauté garlic until fragrant.
- Add tomato passata, oregano, salt, and pepper. Simmer for 10 minutes.
Assemble the Rolls:
- Spread a spoonful of filling on each Courgette strip and roll tightly.
- Pour a layer of tomato sauce into a baking dish.
- Place rolls seam-side down over the sauce.
- Spoon the remaining sauce on top and sprinkle cheese if using.
Bake:
- Bake in preheated oven for 20–25 minutes until bubbly and golden on top.
Serve:
- Garnish with fresh basil and serve warm as a starter or light main.
