Pure organic cow's milk is used to make our finest organic graviera cheese. Our graviera, a golden cheese with a creamy texture and a delicate, sweet aroma, is cared after by our master cheese maker every day as it ages. Omelets, sandwiches, soufflés, and tarts are all improved by graviera. Graviera fingers are traditionally served with briny olives or slivers of honeydew melon. Our hard cheeses are aged longer, which brings out all the nuanced flavors of sheep, goat, and cow's milk.
